It is loaded with Vitamins C, E and A, anthocyanins, antioxidants, calcium, beta carotene, Omega 3′s, magnesium, chlorophyl, phytonutrients, fiber and more.
2C grated carrot
2C grated red cabbage
1/2C diced pineapple
1/4 C diced red onion
1/4 C chopped parsley
3T chopped walnuts
3T pumpkin seeds
3T olive oil
1T apple cider vinegar
2t agave nectar
salt and pepper
parsley sprigs for garnish
Combine all ingredients in a large bowl. Toss. Serve. Celebrate.
